RECIPES WITH DATILS
Datil Peppers can be used in any recipe that calls for hot peppers. Ripe Datils are yellow to orange in color and give the most intense essence of its fruity flavor. Use the ripe yellow Datil get the most distinctive Datil flavor in your recipes. Green Datils are the hottest version. It's important to remember that a little Datil goes a LONG way. As with other hot peppers, wear gloves or be sure to wash your hands VERY well after handling Datils before touching any sensitive parts of your body. The pain you avoid could be your own. DATIL PEPPER SAUCE  
1 lg. Spanish onion, chopped
1 lg. bell pepper, chopped
1 qt. vinegar
1 qt. catsup
Datil peppers (approximately 5 depending on taste)
Wear gloves when handling the peppers. Cook vinegar, onions and bell pepper over medium heat until it comes to a simmer. Add catsup, and blend. Add finely chopped datil peppers and stir. Let simmer 10 minutes. Cool, place in jars and refrigerate.
